
A lot of people have asked me what to eat when following the Paleo diet and seem to have the misconception you have to stick with boring eggs-only for breakfast. I like eggs but I need lots of variety so I thought I would share one of my favorite breakfast recipes, which is Paleo Pancakes. I seriously have gone for weeks eating this almost every morning, they’re just that good. Plus there is so much you can do with them to change it up. I have found many Paleo recipes online, but a lot of them just seem to have too many ingredients. I got this recipe from a friend and it’s simple and easy.
Original Paleo Pancakes Recipe (1 serving):
- 1 Egg
- 1 Banana
- 1 TBSP Almond Flour (or 1 TBSP of Coconut Flour, but I find the pancakes are drier)
This is enough for 1 person, it can make 3 medium size pancakes or 4 small silver dollar size. Coat your pan with coconut oil or grass-fed butter. On medium-high heat, cook for a few minutes and then flip. Depending on the heat and what else you add to these (see below), you may want to lift the side of the pancake up using a spatula and see how done they are. They do cook quickly so keep an eye on them. Also do not flip too early or they could split in the middle.
Personalize your Pancakes
- Blueberries (pictured above): Aim for smaller blueberries because if they are too big, it’s hard to flip the pancakes. Or if you can just toss some on top once the pancakes are done.
- Coconut Flakes: I also love adding coconut flakes (around 1/2 TBSP) to the batter. Changes the consistency a bit and adds great flavor.
- Enjoy Life Chocolate Chips: I add these when I’m craving sweets. It’s dessert for breakfast and delicious. Enjoy Life Chocolate Chips are dairy, nut, and soy free.
If you are aiming for weight loss, it’s better to have these in the morning, even better if it’s post workout (because of the fruit). I feel my recovery is better eating these post workout, then if I would eat eggs. It may take some time mastering the art of flipping these. They can be tough sometimes and fall apart, so don’t be discouraged. Practice makes perfect!

Yummy! Thank you for sharing. I changed up the recipe a bit though … I found I had to use 2 tbsp of almond flour and 1/2 tbsp of coconut flour to get the right consistency … maybe because I used a large banana and an extra large egg … I also added in some cinnamon … all in all, marvelous and a lovely way to change up the same boring breakfast!

PS: … FYI … IKEA sells these extra extra wide flippers so flipping the pancakes was a breeze!
